Growing up, I hated meatloaf. It always seemed like a dry brick to me. Mom didn’t make it often, but, my friends parents would make it and I’d see it in restaurants menus. I would never order it. When I got older, I never made it myself because that’s all I ever thought of it. My Aunt introduced me to mini meatloaves. They were decent. I’d eat them without complaints. I loved all of her cooking. But, I never made them myself, still. About a year ago, Dave and I had dinner at his best friends house. Meatloaf was on the menu. It was Dave’s best friends favorite dish that his wife makes. He has a similar palate as I do. So, I figured, if he was ranting and raving about it, I would like it. I mean, it wasn’t just a little ranting and raving. It was quite a bit.
So, fast forward to dinner on the table. First bit and… HOLY FLAVOR! It was amazing. It wasn’t a dry brick. I was impressed. The sauce was a little sweet too. All I had ever known before was ketchup to be the sauce and that was just, bleh, boring! This sauce was incredible. I understood why he had been so excited for dinner. I understood why he was pestering his wife about how much longer until dinner. I usually HATE meatloaf… but this…. this was PHENOMENAL.
It was so good, I had to have his wife share the recipe with me. She said she got it off Pinterest, but, couldn’t remember where. I’d like to give them credit. So, just know, this is not our original recipe. It is floating around on Pinterest somewhere. BUT, we did doctor it a little. Added a little this, changed a little that and even subbed part of it. So, maybe it is kind of an original 🙂 All I know is, it is on our dinner menu about every other week now. I can’t get enough of it.
It also heats up well the next day for lunch left overs! I am so thankful that we had this recipe. I had to share with you guys. If you’d like some other recipes- I’ve got a few around the blog.
